I have like 3 dozen potatoes… I’m not sure what to do with them but I do love me some homefries, although I almost never make them because of the prep work.

I was thinking of chopping them some up and lightly frying them, with all the seasonings I usually use then adding some diced bacon and onion/peppers, then portioning them out and freezing them in individual vacuum bags. When ready, cut out of the bag, microwave for a minute and finish in the pan?

Anyone have any luck freezing potatoes or do they get super mushy after a freeze and thaw?
