Hi all!

Looking for some creative ideas for healthier road trip meal prep. Ignoring the obvious things such as homemade jerky, lunch meats, fruits, snackable veggies, etc. I have a nice Yeti cooler that will manage to keep anything needed to be chilled chilled. Any good creative suggestions for cold meals no reheat? Thinking tabbouleh, chicken salad.. etc?
