I have been so excited to start meal prepping! Been reading all the posts here, watching YouTube, thinking of ideas.
I just got done. Took me FIVE HOURS. I am completely wiped out. It was way more overwhelming that I anticipated.
All I made was:
Burrito bowls for lunch – chicken, cauliflower rice, sauteed onions and peppers, sautéed plantains.
Chicken with spinach artichoke dip and sweet potato wedges for two nights
Meatloaf and mashed potatoes for three nights
I think where I screwed up was I made everything from scratch, like hand-grating the cauliflower for the rice, making the spinach artichoke dip from scratch, etc. And I weighed out everything for calorie counting.
Anyway, anyone else feel this way after their first meal prep? Whatever I did today isn’t sustainable!
