Glad to find this community, I’ve been meal prepping for years and I really enjoy it. I do have one problem though.
When I do big batches (15-20 meals), I cook all my veggies, either in a pan or steamer and then I weigh them into portions and put them in the freezer. When I reheat, the vegetables are kind of yuck. They are very mushy and not fresh tasting at all. Am I cooking them too long? Is it better to use frozen vegetables rather than fresh if I’m freezing them anyway?
Is there anyway around this?
